Creamy Broccoli Pasta

 

Ingredients

2 Cups Broccoli, cut into small florets.
Olive Oil
Vegetable Spice
2 Cups Milk
1 Tablespoon Flour
Salt & Pepper
1 Teaspoon Crushed Chilli
1 Cup Grated Cheddar Cheese
Pasta Water
Pasta of Choice
 
 
Method:
 
1. Par-boil your pasta of choice separately.
 
2. Add broccoli to a pan, coat with olive oil and vegetable spice (I used Ina Paarman’s). Cook for 3-4 minutes.
 
3. Add the 2 cups milk to the pan and the flour. Stir in quickly to prevent flour clumping. (The flour will dissolve on its own after a good stir and boil).
 
4. Add salt and pepper to taste. Allow to cook for 3-5 minutes.
 
5. The mixture shouldn’t be too thick and still saucy. Add in the cheese and mix until melted.
 
6. Add in two scoops of pasta water and allow to mix.
 
7. Add in the pasta. Allow to cook for 3-6 minutes.
 
8. Top with some cashews for an extra crunch. (Optional)
